Sugar Free Carrot Cake For That Special One

My husband loves Carrot Cake and I have never even considered making it myself until I received a recipe in the mail of a traditional fattening Carrot Cake... So I began to tweak just to see if I could do it.  I was pleasantly surprised at the results! When it comes to baking you need to find a sugar free sweetener that you like. I actually blend sweeteners so that I like the sweetness and texture.  You will need to try a few until you find the one that is right for you. Donuts--To Bake or Not To Bake That Is The Question!

     It's Saturday morning and it seems like everyone is either turning into Krispy Kreme or that little donut shop around the corner and you think to yourself....hmmm it's Saturday I wouldn't mind having a donut.      If you love donuts then incorporate a healthy recipe for donuts.  Diabetes is destroying the health of millions of our fellow Americans and I am saddened when I see little kids that are obese....THERE IS A BETTER WAY!   I never enjoyed cooking when I was younger, but after losing over 115 pounds and knowing that I never wanted to fight that battle again, but I didn't want to feel deprived either...I discovered the way and that way is sending you into the kitchen to cook them yourself without all the grease, sugar and calories.       I cheated on these donuts because I used my Low Carb Chocolate Chocolate Chip Muffin Mix and then grabbed a 1/3 less fat cream cheese I had in the fridge. ...

Pancakes Can Be Fun & Healthy

Breakfast is my favorite meal of the day partly because I know that by eating breakfast I increase my metabolism by up to 10%.  That's right eating breakfast increases your metabolism. Another reason is because I love pancakes and I have fun making them. All my recipes are healthy, but you can add blueberries, sugar free chocolate chips, sugar free syrup while at the same time eating a healthy meal. These are  my blueberry pancakes- Recipe Serves 2 - 3 1 cup old fashioned oat meal 1/2 cup 2% fat cottage cheese 1 whole egg 2 eggwhites 1/4 cup almond milk 1 tsp baking powder 2 Tbs Extra Virgin Olive Oil Optional: sprinkle blueberries on top before flipping Place all ingredients into a blender, blend until smooth. Healthy Oven Baked Sweet Potato Fries

Can Fries really be healthy you ask?   Baked sweet potato fries can and this is why- Sweet potatoes are high in beta carotene which helps to elevate our vitamin A levels about 213.5% of our daily value and they are also high in vitamin C 52.2%  of our daily value along with Vitamin B6. While boiling or steaming actually reduces the glycemic index, adding fat such as olive oil also reduces the glycemic effect and actually helps the body absorb the beta carotene better. Recipe For Bake Sweet Potato Fries 2 Sweet potatoes peeled 1 tablespoon olive oil Sea salt to taste Set oven on 450 Peel potatoes and slice into long even slices so that they cook evenly. Can You Eat Chocolate & Still Lose Weight?

As a Certified Nutritionist and sort of health nut I eat asparagus for breakfast, spinach in my protein drinks blueberries in my 1/3 cup of old fashioned oats, however, I believe in the 85/15 Rule and 85% of the time I eat very healthy, but during the 15% I may want something that isn't green and leafy so that's why I create these recipes. I weighed over 230 pounds and have lost 105 pounds or should I say half a person and kept if off for over 13 years and I'm over 40. So if I blog about a recipe, it's because I know how hard it is to have a snack or "treat" but still stay in my NO SUGAR NO WHITE FLOUR guidelines. Americans love donuts just look around at all the small doughnut shops sitting pretty close to the big names like Dunkin Donuts and Krispy Kreme....unfortunately, Americans seem to love a lot of things that are causing  obesity, diabetes and even early death. So do you have to give up doughnuts? The answer is NO. You can have healthy doughnuts that you should take the time and bake yourself. You can actually make a double batch and freeze some for later. Guilt Free Chocolate Chip Cookies

People that eat healthy are really kind of discriminated against, don't believe me try to find one low glycemic chocolate chip cookie that is guilt free amongst all the cookies and donuts and sweets that doesn't cost a fortune.Unfortunately us health fanatics pretty much have to make them ourselves so here is one recipe I was actually able to make in less than 10 minutes and yes they are healthy and guilt free!  Recipe: Makes between 7 - 10 1/3 cup oat flour (I take old fashioned oatmeal and blend it in my Ninja and in seconds have oat flour) 1/2 cup Spelt flour (wonderful low glycemic index flour to bake and cook with) Pinch of sea salt 1/4 tsp of baking soda 1/2 cup of Hershey's sugar free chocolate chips 2 Tbsp of Splenda, stevia or Coconut sugar your sugar substitute of choice 1/2 tsp of vanilla 1 Tbsp unsweetened applesauce 3 Tbsp of unsweetened almond milk or your milk of choice Preheat oven to 375 Add all the dry ingredients and mix with a fork Then add the we...
