People that eat healthy are really kind of discriminated against, don't believe me try to find one low glycemic chocolate chip cookie that is guilt free amongst all the cookies and donuts and sweets that doesn't cost a fortune.Unfortunately us health fanatics pretty much have to make them ourselves so here is one recipe I was actually able to make in less than 10 minutes and yes they are healthy and guilt
free!
Recipe: Makes between 7 - 10
1/3 cup oat flour (I take old fashioned oatmeal and blend it in my Ninja and in seconds have oat flour)
1/2 cup Spelt flour (wonderful low glycemic index flour to bake and cook with)
Pinch of sea salt
1/4 tsp of baking soda
1/2 cup of Hershey's sugar free chocolate chips
2 Tbsp of Splenda, stevia or Coconut sugar your sugar substitute of choice
1/2 tsp of vanilla
1 Tbsp unsweetened applesauce
3 Tbsp of unsweetened almond milk or your milk of choice
Preheat oven to 375
Add all the dry ingredients and mix with a fork
Then add the wet.
Form cookies on a cookie sheet between 7 to 10
and bake for 6 - 7 minutes don't over bake allow them to continue to
bake while cooling off. If over cooked they will turn hard.
For chewy cookies roll into balls and put them in the fridge and bake them when they
are still cold
