My husband loves Carrot Cake and I have never even considered making it myself until I received a recipe in the mail of a traditional fattening Carrot Cake...
So I began to tweak just to see if I could do it. I was pleasantly surprised at the results!
When it comes to baking you need to find a sugar free sweetener that you like.
I actually blend sweeteners so that I like the sweetness and texture. You will need to
try a few until you find the one that is right for you.
Ingredients:
3/4 cup Splenda
3/4 cup Stevia in the raw
6 packets Luckyleaf Stevia
1 cup of unsweetened applesauce
1 egg
2 eggwhites
1 cup Almond flour
1 cup oat flour (gluten free) I take old fashioned oatmeal and blend until flour texture
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp sea salt
2 cups grated carrots
Frosting
2 pkgs Fat free or 1/3 less fat Philly Cream Cheese
1 cup splenda
1 cup Stevia in the raw
1 tbsp vanilla extract
Cake:
Blend the sweeteners apple sauce and eggs in the mixer. In a separate bowl add the flour, baking
soda, baking powder, cinnamon and salt. Add the dry ingredients into the mixer with the sweetener
and eggs and applesauce. Blend and add in the grated carrots. Pour into your favorite sheet pan and cook at 350 degrees for 25-30 minutes.
Frosting
Place all ingredients in a bowl and blend together with a hand blender
You can use this recipe for cup cakes and donuts.
