Pancakes Can Be Fun & Healthy

Breakfast is my favorite meal of the day partly because I know that by eating breakfast I
increase my metabolism by up to 10%.  That's right eating breakfast increases your metabolism.
Another reason is because I love pancakes and I have fun making them.

All my recipes are healthy, but you can add blueberries, sugar free chocolate chips, sugar free syrup while at the same time eating a healthy meal.
These are  my blueberry pancakes-
Recipe
Serves 2 - 3
1 cup old fashioned oat meal
1/2 cup 2% fat cottage cheese
1 whole egg
2 eggwhites
1/4 cup almond milk
1 tsp baking powder
2 Tbs Extra Virgin Olive Oil
Optional: sprinkle blueberries on top before flipping



Place all ingredients into a blender, blend until smooth.
Quickly spray your griddle with Pam (there is a reason I say quickly)
Then pour batter on top of the griddle... makes 6 to 8 pancakes.
Once there are bubbles on the top of the entire pancake, flip until totally cooked.
Should be a golden brown
Add sugar free syrup or make a fruit spread of your own
Enoy!
